THE CHEF
Meet Demian Cruz, the new Mexican Chef at El Sombrero Restaurant at Sheraton Abu Dhabi Hotel & Resort.

Chef Demian was born and raised in Mexico City, Mexico. Heavily involved in the kitchen with his mother, Demian knew from his childhood that he wanted to be a Chef one day. Although he would have loved to enroll at a culinary school at the age of 17, he decided to work on his business skills first and completed a tourism administration degree.

During this time, he enjoyed many working and learning in some of the most famous restaurants in Mexico City and affirmed his passion in cooking once again.

At the age of 20, he decided to take off his career at "Hacienda de los Morales", a five-star restaurant in Mexico City where he learned the basics of Mexican cuisine. His path then took him to Los Cabos, a touristic city outside of Mexico, where he worked in his first five-star hotel learning how to use the best fresh sea products of his country and combining it with international cuisine. Demian then discovered his passion for hotels, beaches and an international environment. Where better to find these then in Spain. There he enjoyed training with none other than Chef Ferran Adria at El Bulli Hotel.

Equipped with new ideas, international experience and lots of motivation, Chef Demian then moved back to Mexico, where he started working at the boutique hotel, 'La Purificadora' with famous Chef Enrique Olvera of "Pujol Restaurant". This is where Chef Demian learned how to turn basic Mexican dishes into fine gourmet works of art while respecting the traditional products and techniques.

After another station at a five-star hotel in Punta Mita, refining his skills in international dining with a Mexican twist, he decided to introduce the pure Mexican cuisine to the Middle East and moved to Abu Dhabi in the beginning of 2011. He is keen on experiencing a different culture and soaking in the variety of cuisines in this part of the world, nevertheless his ultimate goal is to spread the "real" Mexican cuisine in the city.
His specialties are reflected in the changed menu: The fish "zarandeado style", describing the way that fish is prepared on the West coast of Mexico is a fish marinated in chili and cooked on charcoal. Another highlight in his kitchen are the "taco de Camaron de baja California", delicious shrimps with tortilla wraps and chili mayonnaise.
