The restaurant management , being have hotel’s background, was thinking about those people seeing at any restaurants or during any events or parties grabbing mounds of food in the restaurants and then it goes to the waste by the end of their meals .Being in same time, the restaurant management has the believes and very much aware about what has been mentioned on the Holy Book about the meaning of “Eat and drink waste not by excess” and “we must eat and drink, but do not overload“. Hence they start to look differently and decided to create a kind of restaurant reflecting this believes.They start to display a very unique concept of pay-by –the –gram so as to make the customer aware of the tremendous wastage of food that happens otherwise at buffet type settings. By this concept, the customer becomes conscious right from the first step itself while he/she is serving the food so as to avoid wastage towards the end of the meal From here, the name of the restaurant has come up with this initiatives, and the word of “gram” in Spanish Language means “ gramo” therefore the name has been selected .It is the choice of everyone to budget his meal in gram . Keeping in mind various sustainable issues by introducing this unique concept of hospitality, the management hopes to strike a balance between offering an authentic taste of different cuisines and a sustainable waste management solution.
