Pizzeria Olivella is a traditional, rustic pizzeria is in the quintessentially friendly Italian country style. It specialises in authentic Neapolitan pizzeria in a warm, friendly atmosphere reminiscent of laid-back Italian charm. All pizzas are made in an Italian wood-burning oven in the traditional thin-crust, flame-charred Neapolitan style. Only slow fermentation durum wheat flour from Naples is used requiring a quarter of the yeast of regular pizzerias and is left to rise slowly for 48 hours (as opposed to the standard 2 hours) producing a very light, easy-on-the-stomach dough. Together with Neapolitan grown San Marzano tomatoes and Fior Di Latte Mozzarella, as mandated by the Association of Neapolitan Pizza Chefs, this creates a deliciously light, well-balanced, flavour-packed pizza.
